Appetizers

Judy’s Bacon Wrapped Water Chestnuts

You will need a pound of bacon and four 8 oz cans of whole water chestnuts. Preheat the Forno de Pizza oven to 500 degrees. Drain the water chestnuts and cut the bacon in to 2 inch strips. Next wrap the water chestnuts with the bacon securing them with a toothpick. Place wrapped chestnuts in a cast iron skillet placing them in the pizza oven. Broil the chestnuts until the bacon is nice and crispy. Stir occasionally. While the water chestnuts broil prepare the sauce. For the sauce you will need 1 ½ cups of ketchup, 1 cup of water and ¼ cup of brown sugar. Simmer the mixture bringing it to a low boil. Once ready, pour over the water chestnuts heating it through in the pizza oven. Serve from the skillet or transfer to a heating dish and enjoy! You may want to double the recipe because these never last long!

Mama’s Sweet & Sour Meatballs

Preheat your Forno de Pizza oven to 500 degrees. You will need a 28 oz bag of mini precooked frozen meatballs, a  16 oz jar of grape jelly and 8-10 oz of chili sauce. Pour the frozen meatballs in a cast iron skillet. Mix 10 oz of grape jelly with 8 oz of chili sauce. If you want the meatballs to have a bit more of a kick use 10 oz of chili sauce. Pour the sauce over the meatballs. Bake in the oven for 25-30, stirring occasionally ensuring they are heated through.  Serve immediately and enjoy as these will become a new favorite!

Cast Iron Cheesy Bacon Spinach Dip

Set your Forno de Pizza oven to 375 degrees. Cook ½ lb of bacon in a skillet until crispy. Rough Chop your 10 oz of spinach then sauté it in the bacon fat until it wilts. Drain any excess liquid. Set this aside and prepare your creamy cheese mixture. In a large mixing bowl, combine  8 oz of cream cheese, 1 cup sour cream, ½ cup grated Parmesan and 1 ½  cup of mozzarella cheese and 1 ½  cup of sautéed spinach. Next, add in bacon, minced garlic, and chopped onion. Salt and pepper your dish to your personal taste. Transfer the dip into a cast iron skillet. Bake for 25-30 minutes until the top is golden and bubbly. Serve with your favorite crackers or sliced baguette bread.

Classic Mac & Cheese

Preheat the Forno de Pizza oven to 400 degrees. You will need 1/3 cup of Italian panko bread crumbs, 2 tablespoons of unsalted melted butter, 4 tbsp unsalted butter, 3 tbsp flour, 1 tsp ground mustard powder, ¼ tsp cayenne pepper, ¼ tsp ground nutmeg, ½ tsp ground pepper, ¼ teaspoon salt, 4 cups whole milk, 4 cups sharp shredded cheddar, 2 cups Gruyère shredded cheese, 1 cup Brie cheese with rind removed cut into chunks, 1 tbsp chopped Italian parsley for garnish. Cook 1 lb macaroni to al dente. In a small bowl add Italian panko breads crumbs to the 2 tablespoons of melted butter. Stir and set them aside. While pasta is cooking, add 4 tbsp of unsalted butter into a cast iron skillet or Dutch oven. Once melted add in 3 tbsp of flour whisking it until it is absorbed. Then add in the ground mustard, cayenne, nutmeg, pepper and salt. Continue to whisk until the roux is formed. Slowly add in whole milk and continue to whisk ensuring there are no lumps. Turn off the head and add the Brie cheese in mixing until it is melted. Next add in the Gruyere and cheddar cheese stirring until melted. Drain the pasta and then add it to the cheese mixture ensuring the pasta is evenly coated. Sprinkle the bread crumb topping over the pasta and bake for 25-30 minutes or until golden.

Sweet Potato Casserole

Preheat the Forno de Pizza oven to 350. You will need 4 large sweet potatoes peeled, chopped into large chunks and boiled. For a short cut you can purchase a 40 oz can of yams. Drain and mash the sweet potatoes. Once mashed, add in ½ cup salted butter, 1 cup brown sugar, ½ tsp salt, ½ tsp cinnamon, 1 tsp vanilla extract, and ¼ tsp nutmeg mixing until combined. Place in a cast iron skillet and layer 10 oz of mini marshmallows to top off your dish. Bake for 25-35 minutes or until the marshmallows are golden brown. Serve and enjoy.

Roasted Brussels Sprouts & Carrots

Preheat your Forno de Pizza oven to 425 degrees. You will need 1 lb of Brussels sprouts cleaned trimmed and halved, 1 lbd of carrots peeled and sliced, 2 tbsp of unsalted butter melted, 2 tbsp of our maple syrup as well as salt and pepper to taste. For a bit of a kick add a pinch of crushed red pepper and some fresh herbs to enhance your flavor profile. Mix together your wet ingredients, then incorporate the seasoning to your liking. Next, toss the Brussels sprouts and carrots coating them in the mixture. Place in a cast iron skillet and bake in the Forno de Pizza oven for 25-30 minutes. Be sure to toss the vegetables every 10 minutes ensuring even cooking.

Apple Crisps

Preheat the Forno de Pizza oven to 350 degrees. Place the cast iron rack in the oven after wood and gas have raised to temperature. Meanwhile, in a large bowl add 2 lbs of Granny Smith or Fuji apples peeled and thinly sliced. Then add ¼ cup orange juice, ¼ cup sugar, ¼ cup brown sugar, 1 tbsp cinnamon and 1tbsp nutmeg. Mix until the apples are covered. In a separate bowl mix together the crumble. Add 1 ½ cups flour, ¾ cup sugar and brown sugar, ½ tsp of kosher salt, 1 cup rolled oats and ½  lb cold unsalted butter cut in cubed. Add the apples to an 8×8 cast iron pan or a Dutch oven; then, sprinkle the apples with the crisp topping. Loosely cover the apple crisp with aluminum foil and bake for about 30-40 minutes. Remove the foil towards the end of the cooking to make sure the top becomes a beautiful golden brown. Serve with ice cream and enjoy!

Nutella S’more Pizza

Preheat your Forno de Pizza oven to approximately 600 degrees. You will need your favorite pre-made pizza dough, preferably an 8-inch round dough. If it is larger, you can cut it down to size. Create a mix of one-part cinnamon and one-part sugar. You will also need Nutella chocolate spread and mini marshmallows. Roll out the dough on your pizza pan. Gently sprinkle the cinnamon sugar mixture over the dough. Next, spread the Nutella on the crust. Slide the pizza in the oven. Cook for approximately 1-2 minutes allowing the crust to cook through. Then sprinkle the marshmallows on top cooking for another 1-2 minutes or until the marshmallows are golden. Remove from the oven. Promptly, cut, serve, and enjoy!

From Leftovers to Reimagined Bites

Mini Turkey Shepherd’s Pie

You will need pie crusts, for this recipe we utilized pillsbury refrigerated pie crusts. In addition you will need about ½ of pound of turkey chopped into cubes, ¾ cup of turkey broth, 1 lb mashed potatoes, 1 onion finely chopped, and about 1 ½ cups of mixed vegetables, 4 tsps of flour, 1/8 tsp pepper, ½ salt and 1 tsp paprika. Heat The Forno de Pizza oven to 375 degrees. Roll out pie crusts on a flour covered surface. Using a 4 inch round cutter cut 6 rounds from each pie crust. Lightly spray  a cupcake pan and place the pie rounds in pan. Bake for 9-10 minutes or until the crust is lightly browned. Meanwhile, heat the filling in a skillet. Start by warming the cubed turkey and onion over medium heat stirring frequently. Stir in flour until blended then add broth and seasonings. Cook about 2 minutes until the mixture thickens. Stir in your favorite leftover thanksgiving vegetables. Remove pie rounds and begin filling the meat mixture in to the crusts. Add a generous dollop of mashed potatoes on the pie. Cover loosely with foil and bake for 20 minutes remove towards the end of baking if you’d like the top to get a golden crust.

Cranberry Brie Bites

Preheat your Forno de Pizza to 375 degrees. You will need 1 8 oz tube of crescent dough, 1 8 oz wheel of Brie, ½ cup cranberry sauce, ¼ c chopped pecans and 6 sprigs of rosemary cut into 1 inch pieces. Grease a mini muffin tin with cooking spray. On a lightly floured surface roll out the crescent dough sealing the seams together. Cut the dough into 24 squares and place the squares into a muffin tin. Next cut Brie into small pieces placing the cubes into the dough. Add a spoonful of leftover cranberry sauce on top of each bite sprinkling chopped pecans then finishing it with a sprig of rosemary. Bake for about 15 minutes or until the pastry is golden.
