Recipe Steak on lava stone with potato, jalapeno, bacon wrapped oyster, and chocolate brownie with vanilla bean ice cream and jalapeno

Ingredients:
2-3 tri-tip steaks (cut at 1 to 1 1/2 inches thick)
1/2 lb. small redskin potatoes
1 kosher salt
1 olive oil
1/2 lb of bacon
1 can smoked oysters
1 tbsp. Minced garlic
4 jalapeno
1 triple chocolate brownie mix (Ghirardelli brand)
1 vanilla bean ice cream

This recipe is formulated to be used on Forno de Pizza’s ovens. First, we’ll be heating up the lava stone and while that is heating up we’ll be using the cast iron skillet to saute the potato, jalapeno, and bacon-wrapped oysters. And, with residual heat, we’ll be baking delicious triple chocolate brownie with vanilla bean ice cream and fire-roasted jalapeno.

Method:
1- place lava stone in the center of the oven, start the oven and place 3-4 pieces of debarked oak, and heat up the oven for 20-30 minutes. Once the wood has turned into coals move coals on top of lava stone add 2 more pieces of wood cradling the hot coals.
2- Place skillet on top of coals for 5 minutes, remove and add olive oil garlic, and red skin potatoes 1/2 cut, toss potatoes and place it back in the oven
3- The tri-tip steaks should be room temperature, with garlic, salted, and ready to go in
4- Cut 3-4 jalapenos in 1/4” thick circles, wrap oysters with 1/2 slice of bacon using a toothpick
5- Place jalapeno and oysters in a skillet with the potatoes, toss
6- Once potatoes, bacon-wrapped oysters, and jalapeno are done remove from heat
7- Brush off lava stone with oven brush
8- Drizzle olive oil on tri-tip steaks and sprinkle some kosher salt
9- Using tongues place tri-tip steaks on stone (the stone should be about 700 degrees)
10- Flip steaks after 5-7 minutes on each side for medium-rare to medium
11- Remove from stone– let it cool down 5 minutes
12- Using residual heat from the oven -Follow instructions of brownie mix
13- Place mixed brownie pan on elevated ramekin (important to keep pan elevated for even heat distribution) Make sure oven temp is 325 degrees by keeping the gas burner on
14- Serve steak with potatoes, bacon-wrapped oysters, jalapeno as the main course; and, as dessert brownie with vanilla bean ice cream and fire-roasted jalapeno sliced in half on top
