Ingredients:
1 5lbs. flank steak
1 red onion
1 kosher salt
1 olive oil
1 yellow and red bell pepper1 tbsp. Minced garlic
1 lime
10 pk of flour tortilla

This recipe is formulated to be used on Forno de Pizza’s ovens. First, we’ll be heating up a cast iron plate in the oven. The flank steak with minced garlic will be seared in the hot plate and a warm tortilla.

Method:
1- Start oven and place 3-4 pieces of debarked oak and heat up oven 20-30 minutes. Once the wood has turned into coals move coals to the middle of the oven.
2- Season flank steak with olive oil, minced garlic, and kosher salt
3- Cut up bell peppers and onion
4- Cradle 2 logs with coals in middle, place cast iron plate in the oven directly on top of hot coals for about 10 minutes, remove and add flank steak, bake for 7-10 minutes on each side for medium-rare
5- Using tongues, pull out flak steak and let it rest for 5 minutes before cutting
6- In the meantime sear peppers and onion on the hot plate in the oven, tossing them frequently
7- Once veggies are done remove from heat
8- Slice in thin strips avocado
9- Place flour tortillas on a hot plate for 30 seconds, remove
10- Cut up the flank steak into thin strips and plate on the tortillas with the bells pepper/onion and avocado slices
11- Don’t forget to squeeze some lime juice on it…
