Ingredients:
2-rack lamb
1 bunch of kale
1-lbs. maple smoked bacon
5-6 carrots with stem
1 kosher salt
1 black pepper
1 olive oil
3-5lbs. King crab legs
1 tbsp. Minced garlic
1 rosemary (fresh)
This recipe is formulated to be used on Forno de Pizza’s ovens. First, we’ll be heating up a cast-iron skillet in the oven. The rack of lamb will be seared in the skillet. The fresh carrots will be wrapped with garlic and bacon, and the king crab legs will join in with a smoky flavorful heat.
Method:
1- Start oven and place 3-4 pieces of debarked oak and heat up oven 20-30 minutes. Once the wood has turned into coals move coals to the middle of the oven.
2- Season rack of lamb with minced garlic, pepper, and kosher salt
3- Place skillet in the oven for about 10 minutes, remove and add a rack of lamb, and bake for 8-11 minutes
4- Let rack of lab rest
5- Wrap carrots with bacon and garlic
6- On a large cast-iron skillet place bacon-wrapped and king crab legs
7- Turn the gas off and close the door. Bake for 15 minutes. The oven should start smoking.
Remove from oven and Enjoy!
