Forno de Pizza General Mechanics:
HPC’s Forno de Pizza Hybrid Oven utilizes a 3 part design: the monolithic oven, hearth and cart. The igloo shape that the Forno de Pizza employs is a proven method of cooking that has been around for nearly one thousand years. Unlike other ovens on the market, HPC Forno de Pizza does not require a chimney stack. Our exclusive ventilation technology allows the oven to retain the smoke and heat longer yielding bolder flavors and even cooking.
The design of the Forno de Pizza creates the foundation for the marrying of conduction, convection and radiant heat yielding perfectly cooked flavorful meals.
There are great advantages to using a dual fueled oven. One can easily control the oven’s temperature by adjusting the heat with a mere turn of a dial. In addition, having both gas and wood burning fuel heat sources offers consumers flexibility. The hybrid gas and wood model enables the oven to reach temperature quickly as well as maintain its temperature without having to tend to the flame as much as a singular wood burning oven.
Being able to easily regulate the flame of the burner on the oven gives one the ability to warm up food at low temperatures as well as raise the heat of the oven quickly to sear meat or to burn the oven at its’ hottest range at 1000 degrees to clean the cooking stone.
HPC’s specially formulated refractory oven heats up faster than any other oven on the market. It is paired with HPC’s proprietary electronic ignition technology and offers a dual fuel source. The mechanics of the oven make it safe and reliable yielding even cooking and layered flavors.
To utilize the dual fuel source simply ignite the oven using the electronic ignition. Then place the wood over the flame allowing the wood to catch fire as the oven heats simultaneously. If you want to cook with one fuel source you can easily turn off the gas or omit the use of wood. The transition is just that easy.
